Grass-Fed Meat Loaf

This meat loaf is great for dinner or fry up some eggs and have it with breakfast.  Using grass-fed beef or bison makes a leaner and healthier.  Get your grass-fed meats for this recipe.

Makes about 12 servings

Ingredients:
  • 8 slices         bacon fried and crumbled
  • 3                   Large eggs
  • 3 lbs             Grass-fed Buffalo or beef
  • 2                   Large cloves of garlic finely chopped (minced)
  • 1/2 cup         Finely chopped red onion
  • 3                   Sun-dried tomatoes diced
  • 1 cup            Grated Parmesan or Asiago cheese
  • 1 tsp             Sea salt
  • 1/2 tsp          Ground pepper
  • 2 Tbsp          Oregano
Process:
  1. Fry the bacon until crisp and chop lightly
  2. Preheat oven to 350'F (175'C)
  3. In a food processor ground the bacon and then add the eggs and combine
  4. In a large bowl mix the beef/bison, garlic, onion, tomatoes, cheese, salt, pepper and oregano
  5. Pack a large loaf pan - 12 x 4 1/2 inchs
  6. Bake for 1 1/4 hours and let cool for 10 minutes before eating

Grass-Fed Beef 80% less chance of E-Coli

E-Coli and other dangers are just part of our traditional beef industry, but it doesn't have to be this way.  Many farms and ranches have begun to change the way they raise their cattle by moving to all grass-fed and away from the standard practice of collecting the animals in confined pens and fattening them up for the last few weeks of their lives - this is the main cause of disease and the reason why non-grassfed animals are often given doses of antibiotics and such.

Here is a quote from a new article that discusses the issue and the recent E-coli breakout in Canada:  “If you are raising grass fed beef there is an 80% less chance of having E. coli O157. If the plant is only geared to slaughtering grass fed beef then the chances of E. coli entering the plant is basically nil,” noted Steves.
