Grass-Fed Red Meat is the Healthier Choice - article by Chris Kesser
In my recent post on red meat, I showed you why red meat of any kind is a healthy choice, and doesn’t deserve the bad reputation that it’s given by the media and mainstream medical establishment. But although conventional beef won’t give you cancer and is an important source of highly bioavailable nutrients, we can’t ignore the fact that grass-fed meat is still superior to grain-fed.
The classic idiom “you are what you eat” applies just as well to cows as it does to humans, and there are some pretty significant differences in the quality of red meat based on how the animal was fed.

CLA: Anti-Carcinogenic and Anti-Inflammatory
A great source of CLA, or conjugated linoleic acid, is Grass Fed Beef and Buffalo.
CLA wasn't discovered until 1979 when researchers applied a beef extract to the skin of mice that were also exposed to a potent toxin. After a 16-week period, the group of mice with the beef extract had 20 percent fewer tumors than those without. Nine years later, in 1987, the identity of that powerful anti-carcinogen was revealed.

Pan Seared Lamb Chops with Red Wine Sauce
These pan seared lamb chops with red wine pan sauce are very easy to put together and taste amazing! Your friends and family will think you have been to culinary school... Ingredients:
- 1 1/2 pounds of rack of lamb chops
- 1-2 Tbsp of coconut oil or olive oil
- 3 Tbsp finely minced shallots
- 1 Tbsp red wine
- 3/4 cup of chicken or beef stock
- 1 tsp of minced rosemary (can replace with thyme or tarragon)
- 4 Tbsp unsalted butter - cut into small cubes
- Freshly ground black pepper and sea salt to taste
Process:
- Lightly rinse rack / chops in cool water
- If not pre-cut, cut the rack into individual chops and pat dry
- lightly season both sides with salt and pepper
- Start oven to bake at 400'
- In a large skillet pan preheat the oil at medium heat
- Sear the chops for ~2 minutes per side
- Remove chops from pan, cover with foil to keep warm and set aside
- Drain away most of the fat in pan leaving about 1 Tbsp
- Saute the shallots until soft
- Add the wine and stock
- Scrape up any brown bits sticking to bottom of pan
- Bring to a boil until liquid is reduced by half
- Add and stir in the rosemary
- Remove the pan from the heat and stir in the butter until completely melted in
- Add salt and pepper to season
- Pour off sauce into a small bowl or measuring cup
- Place chops back in pan pour sauce over the chops
- Place in oven for about 2 minutes - remove and serve

Grass-Fed Meat Loaf
This meat loaf is great for dinner or fry up some eggs and have it with breakfast. Using grass-fed beef or bison makes a leaner and healthier. Get your grass-fed meats for this recipe.
Makes about 12 servings

- 8 slices bacon fried and crumbled
- 3 Large eggs
- 3 lbs Grass-fed Buffalo or beef
- 2 Large cloves of garlic finely chopped (minced)
- 1/2 cup Finely chopped red onion
- 3 Sun-dried tomatoes diced
- 1 cup Grated Parmesan or Asiago cheese
- 1 tsp Sea salt
- 1/2 tsp Ground pepper
- 2 Tbsp Oregano
- Fry the bacon until crisp and chop lightly
- Preheat oven to 350'F (175'C)
- In a food processor ground the bacon and then add the eggs and combine
- In a large bowl mix the beef/bison, garlic, onion, tomatoes, cheese, salt, pepper and oregano
- Pack a large loaf pan - 12 x 4 1/2 inchs
- Bake for 1 1/4 hours and let cool for 10 minutes before eating
